Mini Ham & Bacon Cheddar Cups

Mini appetizers are some of my favorite foods, but my picky-eater husband didn't think they counted as "dinner" until NOW! These Ham and Bacon Cheddar Cups are hearty enough to hit the spot. It seems I’ve been on a cheese and bacon kick lately.

First, it was these amazing Bacon Cheddar Mashed Potatoes for Thanksgiving, and then I finally shared my infamous Best Potato Soup Recipe Ever, topped with none other than more bacon and cheddar cheese. It’s a sickness, I tell you…except I don’t want it to stop!

This latest concoction truly could not be any easier, especially since it uses a can of biscuits to start. I’m all for Southern “from scratch” buttery biscuits, but sometimes a quick snack on the table is just what you need. You really can’t go wrong with Pillsbury!

The Process

Step 1: Shred 2 cups of cheddar cheese, and chop 2 small packages of thinly sliced deli ham {we love Buddig} into a large bowl. Add mayo, bacon bits {learn how to make your own here}, and honey mustard. Then mix all ingredients together.

Step 2: Open your can of biscuits {I used Pillsbury Grands Original} and cut each biscuit into quarters, Press each section into the bottom and sides of mini muffin pans.

Step 3: Fill each cup with just under a tablespoon of the cheese mixture and bake until golden brown…about 9-10 minutes.

Step 4: Let cool for 2 minutes, than remove from pans and serve warm. Mmmm….SO tasty!

Mini Ham & Bacon Cheddar Cups

Description

Mini appetizers are some of my favorite foods, and these Ham and Bacon Cheddar Cups are hearty enough to hit the spot. Perfect for game day snacking!


Ingredients

Scale
  • 2 cups shredded cheddar cheese
  • 2 pkgs (2 oz each) thinly sliced deli ham, chopped
  • 1/2 cup mayo
  • 1/3 cup bacon bits
  • 2 tsp honey or Dijon mustard
  • 1 tube large refrigerated flaky biscuits

Instructions

  1. In a large bowl, combine cheese, ham, mayo, bacon, and mustard.
  2. Split biscuits into quarters, press onto bottom and up sides of ungreased mini-muffin cups.
  3. Put just under 1 tablespoon of filling mixture into the center of each cup.
  4. Bake at 450 degrees F, 9-10 minutes or until golden brown and cheese is melted.
  5. Let stand for 2 minutes before removing from pans. Serve warm.

With bacon, canned biscuits, and a whole bunch of cheese, I expected these mini cups to run a little less frugal than my normal recipes. But for a once in a while treat, they’re so much fun to make and eat.

You can always experiment with the recipe too, and eliminate bacon {the most expensive ingredient}, or make your own biscuits from scratch.

I personally think these cuties would be perfect for the Super Bowl or any game day for that matter. Although, you may have to make more than one batch.

They truly are a hit!

  2. did you put the whole biscuit in each muffing tin, or after you cut the biscuit, put 1/4 of each biscuit in each muffing tin? tks

    1. Put 1/4 of the biscuit in each mini muffin tin! If you put the whole biscuit in you’ll have a bit of a biscuit “explosion.” 🙂

    1. I have not tried freezing them yet, but I think that’s a great idea! It’s such a timesaver when you can make things ahead of time and then just throw them into lunches. Let me know if you try this!

  3. I just made these for 3 teenage boys and my husband and they devoured all 32 of them in minutes.They loved them!! I can’t eat bread but I did try a nibble and they were incredible and easy to make.Thanks for sharing this yummy recipe.

    2. Mary, popping just the filling into Teflon-lined mini muffin tins makes an insanely delicious (though rich) “crack bite”. I use reduced fat cheddar cheese and olive oil mayonnaise.

      42 calories, 3 g fat, 0 carb, 3 protein.
