When I need to get dinner on the table fast, I look no further than a mini version of my most favorite comfort food — flaky biscuit pizzas. 

Even though I’m more of a hard core from-scratch kind of gal, I have no shame in picking up refrigerated biscuits every once in a while, especially when we’re going through such a busy season of life. It just make weeknight dinners so much easier!

My sister-in-law actually gave me this recipe right after Joseph and I got married, and I have come to rely on it quite a bit between our hectic work schedules. It’s such a versatile snack or supper, and each “pizza” can be customized with just about any topping you can think of. Although, I’m so much of a cheese fanatic {as is my husband}, that we rarely ever deviate from our go-to classic.

But all pizza preferences aside, there’s one thing I’m pretty sure we can both agree on…..and that’s how easy this recipe comes together. So much so that you will want to put this one on your weeknight meal plan, stat!

The Process

Step 1: Press refrigerated biscuit dough on a greased or parchment lined cookie sheet.

Step 2: Spoon a tablespoon of pizza sauce on top of each biscuit and spread around.

Step 3: Add mozzarella cheese and any other favorite toppings.

Step 4: Bake in the oven at 375 degrees F for 12-15 minutes, or until golden brown around the edges. That’s it!

Ingredients

  • 1 can refrigerated biscuits
  • 1/3 jar pizza sauce
  • 2 cups cheese
  • additional toppings, if desired

Instructions

  1. Press biscuits onto a greased or parchment paper lined cookie sheet.
  2. Top with pizza sauce and other toppings.
  3. Bake in the oven at 375 degrees F for 12-15 minutes.

Although this recipe does cost a little bit more than traditionally homemade biscuits, the time factor is what really comes into play here. The convenience is totally worth it for me this time around, and if life slows down a little bit, I’ll probably go back to my homemade dough days….hmmmm……or maybe not!

  2. I like how quick this is! Although I wish you would specify the ingredients a bit more precise. I used another dough and tomate instead of pizza sauce (so kind of like a different recipe).   3. I’m not sure if they sell these in Australia, but it’s biscuit dough in a can {like Pillsbury} that is already cut so you can break it apart into 10 biscuits. Although you can certainly try this with homemade biscuit dough as it doesn’t take too much extra time to whip up. Hope that makes sense and can’t wait for you to try the recipe!

  5. Looks good, I’ll have to pin this. I make pizza a lot, most frequently on homemade dough, but also on tortillas and english muffins, but I never think to use biscuit dough 🙂

  6. I have a really good dough that I use for breadsticks, pizza crust, biscuits–whatever I need it fits the bill. The best part–I can make a huge batch and freeze what I don’t need for another time. Never thought about using that recipe for mini pizzas. What a great idea. And a time saver at that with the dough made up ahead of time. The original recipe is from Heavenly Homemakers–1 cup melted butter, 1 cup plain yogurt, 3 1/2 cups flour, 1 tsp salt. Mix melted butter and yogurt together, then add flour and salt. For breadsticks I roll out the dough to about 1/2″ thick and cut into strips. Depending on how fancy I want to be I can leave plain or twist the strips. These work good with cinnamon sugar too. Pizza crusts I just roll out and add my toppings. Can’t wait to try mini pizzas with this dough. Thank you for a great idea.

    1. I am definitely intrigued that the dough you use has yogurt in it! I can’t wait to try it as my both my husband and I would love to find a breadstick recipe that tastes amazing. Cinnamon sugar would be SO good!
