Open-Faced Deviled Egg Salad Sandwiches

Ingredients

  • 1 hard-boiled egg
  • 1 tsp mayo
  • 1/2 tsp Dijon mustard
  • Paprika & salt to taste
  • 1 slice whole wheat bread, toasted
  • Chives (optional)

Instructions

  1. Make hard-boiled egg.
  2. Chop egg and mix with mayo and mustard. Add paprika and salt to taste.
  3. Spoon egg mixture over a slice of toast and sprinkle with chives, if desired.
