Strawberry & Cream Muffins

Ingredients

2 cups all-purpose flour

2 1/2 tsp baking powder

1/2 tsp salt

1/2 cup unsalted butter, softened

1 cup sugar

2 eggs

3/4 cup whipping cream

1 tsp vanilla extract

1 cup finely chopped strawberries


Instructions

Step 1: Preheat oven to 375 degrees, and line muffin tin with liners (or spray).

Step 2: Whisk together flour, baking powder, and salt.

Step 3: In a mixer, cream butter and sugar until fluffy (about 2 minutes). Beat in eggs, cream, and vanilla (or 1/2 tsp almond extract).

Step 4: Stir in flour mixture just until moistened. Fold in cut strawberries (cut small so they evenly disperse!).

Step 5: Scoop into prepared muffin tin until 3/4 full. Bake until light brown (22-26 min). Let cool in tin on a wire rack for 10 minutes then transfer muffins to rack to cool completely (if you can wait that long!).
