Easy Key Lime Pie

Ever since Joseph and I crossed Key West off our bucket, I’ve had a constant craving for the unique and tart flavor of actual Key Limes. They’re a little different than the green ones found in the grocery store, and taste SO yummy!
When some of Joseph’s family came over for dinner and brought one for dessert, I knew I just had to stop procrastinating and finally learn how to make this delectable treat.
The pie turned out much easier than I was expecting, and is quickly becoming our go-to Summer dessert. It’s rich, full of flavor, and keeps wonderfully in the freezer. So much so, that you could serve up a taste of sunny Florida right in the middle of Winter!
How to Make Easy Key Lime Pie:
Step 1: Beat egg yolks and lime zest on high speed for about 5 minutes, until they poof a little bit and get fluffy.
Step 2: Slowly add in condensed milk and continue to beat until thick, 3-4 minutes longer.
Step 3: Lower the mixer speed and slowly add lime juice, mixing until just combined. If you don’t have access to lime juice in your grocery store, you can pick up a bottle on Amazon.
Step 4: Pour mixture into a homemade or store-bought graham cracker crust {I use the latter to save time}, and bake for 10 minutes until just set. Cool on a wire rack until able to handle, then refrigerate until completely cool.
Step 5: Freeze 15-20 minutes before serving, then decorate with whipped cream and enjoy!

This easy key lime pie recipe uses authentic key lime juice and is super easy to make. It’s rich, full of flavor, and keeps wonderfully in the freezer. So much so, that you could have a taste of sunny Florida right in the middle of Winter!
Ingredients
- 3 egg yolks
- 2 tsp lime zest
- 1 (14-ounce) can sweetened condensed milk
- 2/3 cup freshly squeezed key lime juice, or store bought
- Graham cracker crust
Instructions
- Beat together egg yolks and lime zest at high speed until fluffy, about 5 minutes. Gradually add the condensed milk and continue to beat until thick, 3-4 minutes longer.
- Lower the mixer speed and slowly add lime juice, mixing until just combined. Pour mixture into crust and bake 10 minutes at 350 degrees F or until just set.
- Cool on a wire rack until able to handle, then refrigerate until completely cool. Freeze until needed. Decorate with whipped cream before serving.

You could definitely make this key lime pie a lot cheaper by mixing up the graham cracker crust on your own, but in this case, I’m going for time over money. Remember my confession about not loving the whole cooking thing? Cheater ingredients help me get better at that!
