Easy Carrot Bread

I love quick breads. I grew up on both zucchini and banana breads, and am just shy of being labeled a carb addict. So when I found this recipe for carrot bread, I knew I had to pop this one in the oven, STAT.
When I first made it though, this bread came out way too gooey in the center despite cooking for the allotted amount of time. I even added 10 more minutes, but it was still too soft. A soft center is incredibly yummy, but not super intuitive to cut and serve. Plus, if I added any more baking time, the edges would start to over-crisp and brown, and well, we can’t have that either.
So I lowered the temperature and let it cook for longer, and it came out perfect — yay! And wouldn’t you know it, I decided to share this recipe with you, because I’m totally nice like that. Your kitchen is going to smell divine!
The ingredients for carrot bread are really pretty simple — you probably have most of them in your fridge and pantry right now, but I still had to head to the store to pick up a few items. Lately, I’ve been experimenting with a FREE app called Flipp, and I am pretty impressed at the way it has helped me score the best deals on items I already need to buy.

Instead of manually comparing prices with my shopping list — Flipp does this automatically, saving me time and money. But I’ve gotten a bit off track…..it’s time to make this delicious carrot bread!
How to Make Easy Carrot Bread
Step 1: Preheat your oven to 325 degrees, and spray a loaf pan with oil {or grease with shortening/butter}, making sure to dust lightly with flour. Grate carrots in a food processor and set aside.
Step 2: In a mixing bowl, cream the sugar and oil together, then beat in the eggs.
Step 3: In a small bowl, stir together the flour, baking powder, baking soda, cinnamon, and salt. Stir flour mixture into cream mixture until just combined.
Step 4: Stir in the carrots and pour into loaf pan, spreading out the top evenly. Bake 55-60 minutes or until cake tester comes out clean from the center.
Step 5: Cool on a wire rack, slice, and enjoy!

- 3/4 cup oil
- 2 eggs
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 cup grated carrots
Instructions
- Preheat oven to 325 degrees. Spray a loaf pan with oil and dust lightly with flour.
- In a mixing bowl, cream the sugar and oil. Beat in the eggs.
- In a small bowl, stir together the flour, baking powder, baking soda, cinnamon, and salt. Stir flour mixture into cream mixture, and then stir in the carrots.
- Put into prepared loaf pan, bake 55-60 minutes or until toothpick comes out clean from the center. Cool on a wire rack, slice, and enjoy!

I’m honestly not sure how that would turn out! I know there are some great egg substitutes out there. It’s worth a shot!
In typical fashion I decided at 9pm to make this. So I had to improvise. I didn’t have sugar so I substituted it with Honey ( a little big less than half a cup) and to try to make it so my mom can eat it I used Gluten free flour mix. And it’s amazing. Seriously its like cake but not sweet enough to be cake .. like if cake and bread met each other half way. Thanks!
