No-Bake Special K Bars

Every year for Christmas, my grandma makes and arranges these special bars on a platter right alongside peanut butter blossoms and sugar cookies. They are a huge Holiday staple and I look forward to them every year!
My grandma actually calls them “Thai {Tai?} Cookies”, and honestly, I have no idea where that came from. Has anyone else heard of this??
Tell you what—I don’t even care what you call them. Let’s just agree you can’t go wrong with peanut butter, chocolate, and a crunchy/gooey base…no matter the name. Besides, everyone I know raves about how addicting these are, and once you try them, I’m positive you’ll join the winning side. 🙂
How to Make Special K Bars
Step 1: In a large bowl combine Karo syrup and sugar. Heat to a boil and then remove from heat quickly.
Step 2: Stir in peanut butter until melted.
Step 3: Carefully mix in Special K Cereal and then spread into greased 9×13 pan.
Step 4: In a separate bowl combine butter, 12 oz pkg of chocolate chips, and 12 oz butterscotch chips. Melt, and then spread on top of bars.
Step 5: Let cool completely before serving.

- 3 tbsp butter

Can these bars be frozen?
Can you use regular corn flakes or frosted flakes?

You could give it a try! But I think the Special K flakes have a bit more thickness than cornflakes. I might be concerned that the bars might lose their crunch.
